Forget the horrible pots of supermarket potato salad: potato pieces with hard centres and vinegary taste. Yuck! This German-style potato salad was made in about 5 minutes of prep time (plus cooking and cooling) and is full of deliciousness.
For a tasty, quick and easy whole-food plant-based meal, serve it with my chickpea fritters. Five minutes prep time plus 6 minutes cook time.
